As September fades into October, the bees turn their attention to the ivy flowers that blanket hedgerows and woodland edges. These late-season blooms provide a vital source of nectar when most others have vanished, resulting in a honey that is rich, full-bodied, and distinctly autumnal.
Thanks to the abundance of ivy in Lower Woods (the largest ancient woodland in the Southwest), the bees have thrived this year, producing a wonderful surplus of this distinctive honey. With its earthy aroma and complex, slightly herbal flavour, Ivy honey is a true reflection of the changing season.
Because pure ivy honey naturally crystallises and sets rock solid very quickly, we have carefully crafted this batch into a soft set honey. This ensures it retains a smooth, creamy, and perfectly spreadable texture while keeping its bold character that wonderfully lingers on the palate.
Did you know? The pollen and nectar gathered from autumn ivy aren't just for making honey, they are absolutely crucial for the colony to raise "winter bees." Unlike regular worker bees that only live for a few weeks, these special winter bees have larger fat reserves and live for several months, allowing them to keep the hive warm and ensure the colony survives until spring.
