Our early summer honey is light, runny, and just the right side of wild, much like the bees who made it.
After a mild spring and an April that could’ve passed for July, the bees wasted no time getting down to business. By the time most of us were still looking for the barbecue tongs, they were already out foraging, hitting the hawthorn, dandelion and blackthorn hard before turning their attention to the season’s first blackberry flowers.
Based at Lower Woods, our bees enjoy a lush, undisturbed patch of countryside that’s a little too soggy for farming but perfect for honey. Thanks to this rich and varied landscape, they’ve produced a beautifully light honey with delicate floral notes and a whisper of summer fruit.
Did you know? Lower Woods is one of the largest ancient woodlands in Gloucestershire, a nature reserve managed to preserve its incredible biodiversity. The diverse mix of plant life, from the early-flowering hawthorn and blackthorn to the abundant blackberry flowers, is a direct result of this careful stewardship and provides the bees with a uniquely rich and varied diet, which is reflected in the complex flavour of this honey.
