This exceptional honey, a testament to the very first blooms of spring, comes from a single, remarkably strong hive nestled within the wildlife-rich Lower Woods. Capitalizing on an unusually sunny and mild early season, our bees expertly gathered nectar from a unique succession of early-flowering plants. Unlike our later spring honey, this limited 10kg harvest is a delicate expression of dandelion, blackthorn, and even the subtle sweetness of snowdrops, all blossoming beautifully thanks to the favourable weather and the damp, undisturbed landscape of Lower Woods. The early emergence of willow catkins provided a strong start for the hive, enabling them to take full advantage of these fleeting floral sources as they appeared.
Did you know? The collective strength of this hive is a remarkable feat. A strong honey bee colony in the spring can have up to 20,000 bees, all working together to collect nectar and pollen. Each bee might visit thousands of flowers a day to gather enough to contribute to this special honey.
The result is a truly rare honey, a light and exquisitely floral experience that captures the very essence of the season's initial awakening. Its unique character sets it apart, offering a more delicate and nuanced floral profile compared to the richer notes of late spring honey. This small batch is a pure reflection of nature's early bounty and the exceptional strength of this particular hive. A truly special taste of the season's first kiss.
